Pomegrante & Parsley Salad

Ingredients
- Pomegranate seeds – 2 cups
- Cous cous — 1/4 cup
- Pepper
- Olive oil — to drizzle
- Flat leaf parsley — 1 big bunch
- Mint Leaves – 1 small Bunch
- Lemon – 1 no
- Salt
Method
- Add 1/2 cup of boiled water to cous cous. Cover & leave it for 20 mins. Once it cools down, fluff it up with a fork. Now add pomegranate seeds, salt, pepper, olive oil & squeeze lemon. Wash and clean parsley & mint. Chop them both fine & mix with the pomegranate. Toss & serve immediately.
