Ingredients

  • Pomegranate seeds – 2 cups
  • Cous cous — 1/4 cup
  • Pepper
  • Olive oil — to drizzle
  • Flat leaf parsley — 1 big bunch
  • Mint Leaves – 1 small Bunch
  • Lemon – 1 no
  • Salt

Method

  • Add 1/2 cup of boiled water to cous cous. Cover & leave it for 20 mins. Once it cools down, fluff it up with a fork. Now add pomegranate seeds, salt, pepper, olive oil & squeeze lemon. Wash and clean parsley & mint. Chop them both fine & mix with the pomegranate. Toss & serve immediately.
