Chole Bhature is an Indian chickpea stew and fried bread that is simply irresistible. Cant avoid it cant resist it.

For Bhatura
Maida- 2 cups
Rava - 1/4 cup
Baking Powder - 1/4 tsp
Sugar - 1/2 tsp
Yogurt - 1/2 cup
Salt - to taste
For Chole Masala:
Chole/Chana (soaked)- 1 cup
oil - 3 to 4 tbsp
Bay Leaf - 1 or 2
Cinnamon - 1
Onion - 2
Ginger Garlic paste - 1 tbsp
Tomato Mashed - 1 cup
Chole Masala Powder - 1 1/2 tbsp
Red chilly powder - 1/2 tsp
Method:
For Bhatura:
take maida in a mixing bowl. Add rava to it. Add baking powder, sugar and salt. Combine well. Add yogurt and mix well. Knead to smooth dough. Cover it with damp cloth and allow to rest for 3-4 hours. After the resting time you see the dough is more soft, moist and slightly rises. apply little maida to hands and knead well. Divide the dough to equal sized balls. Roll it to big sized poori. Heat oil in a thick bottomed wok. Gently drop the rolled puri in hot oil. wait till it puffs up and flip it to the other side. Deep fry until it turns golden and crisp on both sides.
For Chole:
Heat oil in a pressure cooker. Add cumin seeds, bay leaf and cinnamon stick. Saute till it crackles. Add finely chopped onion and cook till its golden brown. Add ginger garlic paste and fry for a minute. Add mashed tomatoes and cook for 2 minutes. Now add whole masala powder and stir well. Add red chilly powder and salt. Cover and cook in low medium flame for 6 -7 minutes. You can see the oil separates out of the gravy. Now add soaked chanas. mix it very well. Add two cups of water and pressure cook for 6-7 whistles or till the chana is cooked tender.
