Tawa Pulao
Tawa is the Indian iron griddle and it has several uses. From preparing start- ers to main courses, from making rice and breads to desserts, this is a versatile kitchen equipment. TawaPulao means rice prepared on a flat iron griddle.

Ingredients
- 4 cups Basmati rice
- 1 tbsp cumin
- chopped 1 tbsp ginger
- chopped 1 green chilli
- 1 tsp red chilli powder
- 1 cup tomatoes, chopped
- 1 cup mint leaves
- boiled 1⁄4 cupoil
- 1 tbsp garlic
- chopped 3⁄4 cup onion
- chopped 1⁄2 tsp turmeric
- 2 tsp coriander powder Salt to taste
- 1⁄2 cup capsicum, chopped
- 1 cup browned onions
Method
- In a pan, pour oil and add cumin. When it starts to crackle, add garlic, ginger, and green chilli. Saute for a minute and add onions, saute till transparent. Now add the capsicum and saute for another minute.
- Add turmeric, red chilli powder, and coriander powder. Saute and add 2 tbsp of water so that the spices do not burn. Now add the tomatoes and saute till they wilt.
- Now add boiled Basmati rice and mix with flat spatulas. At this time, add salt, mint leaves, and browned onions. Serve hot.
