Tomatoes & Pickled Beet Salad
If you dislike tomatoes and beetroot, I guarantee you will start liking them after you taste this. The colours are vibrant and the pickling makes the beets very interesting.

Ingredients
- 10 slices of red tomatoes
- 10 cherry tomatoes
- 2 sprigs of basil
- crushed 4 tbsp olive oil
- Pepper powder to taste 2 cups vinegar
- 10 slices of green tomatoes
- halved 10 slices of beetroot
- 2 garlic cloves
- Salt to taste
- 1 1⁄2 cup sugar
Method
- In a pot, add vinegar, 1⁄2 cup water, and sugar. Allow it to boil and then add the beets. Cook till beets are tender but still have a bite. Remove from heat and allow them to cool in the same liquid.
- Crush basil leaves and add crushed and chopped garlic to it. Then add salt and pepper and whisk in olive oil.
- Arrange the tomato and beetroot slices on a tray and sprinkle the dressing on top. Serve immediately.
