How to Cook Bhatti ka Paneer Tikka

Bhatti ka Paneer Tikka is traditionally made on a charcoal grill. The masala used is also called kala masala. This bhatti marination with kala masala is quite popular in punjab esp in amritsar. Usually the marination is done on to chicken but works absolutely fine on paneer and veggies. Ingredients

For Bhatti masala

  • Anardana - 4 tbsp
  • Coriander seeds - 2 tbsp
  • Cumin - 1 tbsp
  • Cinnamon(1inch) - 2pms
  • Black cardamom - 2nos
  • Cloves - 12 nos
  • Peppercorn - 1 tbsp
  • Cardamom - 8no

Marination

  • Mustard oil - ¼ cup
  • Bhatti masala - 2 tbsp
  • Yellow chilli powder - 2 tsp
  • Chilli powder - 1 tsp
  • Black salt - 1½ tsp
  • Salt - to taste
  • Turmeric - ½ tsp
  • Besan (roasted) - 1½ tbsp
  • Ginger garlic paste - 1 tbsp
  • Lemon - 1 no
  • Hung curd - ¾ cup
  • Coriander chopped - 1 tbsp

Paneer & Veggies

  • Paneer - ½ kg
  • Onion chunks - handful
  • Pepper chunks - handful

Method

  1. Cut paneer into cubes and add some salt. Keep aside for 30 mins.For Bhatti ka masala, heat a pan and add some anardana and roast on a slow flame. To this add coriander, jeera, cinnamon, cardamom, cloves, pepper and green cardamom. Cook this till the masala is dark brown. Take this out on a plate and allow to cool. Put this in a mixer grinder and grind. The masala is ready.
  2. For the marination, use some mustard oil in a pan. To this add the Bhatti ka masala. Add yellow chilli powder, red chilli, salt and bhuna besan, tumeric, ginger garlic paste, lemon and mix. To this add some hung curd, fresh coriander and mix. Now use this mixture to marinate the paneer.
  3. On a grill plan, put some oil and make sure the pan is very hot. Grill the pieces of paneer till golden brown and plate.
