Cheese Potato Balls

Ingredients
For Mixture
- Potato boiled & mashed – 1½ cup
- Coriander chopped - 1 tbsp
- Onion chopped - 2 tbsp
- Corn niblets - ¼ cup
- Green pepper chopped - 1 tbsp
- Mint chopped - 2 tbsp
- Red pepper chopped - 1 tbsp
- Ginger chopped - 1 tbsp
- Yellow pepper chopped - 1 tbsp
- Green chilli chopped - 1no
- Salt - to taste
- Pepper - to taste
- Cheddar cheese grated - 1 cup
- Cheese cube - 5 nos
For Crumbing
- Flour - 1 cup
- Salt - a pinch
- Water - 3/4 cup
- Bread crumbs
For Frying
- Oil - for deep frying
Method
- To prepare the mixture for cheese balls add all the ingredients under mixture except for cheese cubes and mix them together. Check for seasoning and adjust.
- Take a small portion of the mixture (the size of a ping pong ball) place a cheese cube in centre and cover it with the mixture. Roll to shape it into a round. Repeat the same for the remaining mixture.
- Mix together flour, salt and water to make a slurry. Dip the cheese balls in the slurry and then dunk it in bread crumbs. Coat the crumbs evenly and then deep fry them on moderate hot oil till the outside is golden brown in colour. Remove and serve hot.
