Ingredients

  • Focaccia slices – 6 nos
  • Olives sliced – 1/2 cup
  • Cherry tomato – 20 nos
  • Parmesan cheese flaked – 1 cup
  • pepper – to taste
  • Extra virgin olive oil – 2 tbl spn
  • Garlic chopped – 1 tsp
  • Basil leaves – few nos
  • salt – to taste

Method

  1. Slice the cherry tomato. Chop up the basil leaves. In a bowl combine olives, chopped garlic, basil leaves and olive oil.
  2. Toast the bread till crisp. Remove and spoon the olive and tomato topping on this crisp bread. Sprinkle parmesan cheese.
