This innovative modern Indian dish combines classical match of curry powder with tamrind and nutty peanuts.

Ingredients

  • Chicken supreme - 8 nos
  • Lemon - 1 no
  • Garlic paste - 2tsp
  • Madras curry powder -1 1/2 tbsp
  • Sugar - 200
  • Balck salt - to taste
  • Roasted cumin-2 tbsp
  • oil - 2 tbsp
  • Wooden skewers - 8 nos
  • Salt - to taste
  • Ginger paste - 2 tsp
  • Black pepper powder - 1 tsp
  • Tamrind - 200
  • Red chilly powder - 1tbsp
  • Dried ginger powder -1tbsp
  • Roasted peanuts - 50 gms

Method

  1. Apply salt to the chicken, squeeze lemon, ginger paste, garlic paste, pepper powder and madras curry powder. Leave aside for half hour.
  2. For the dip place tamarind in a handi and add 4 times the water. Bring to a boil and add rest of the ingredients except peanuts. Cook till it coats the back of a spoon.
  3. Now strain the sauce and add pounded roasted peanuts.
  4. Skewer the chicken. Heat a pan and add oil. Place this chicken on the hot pan, cook on both sides. Serve hot with the tamrind and peanut dip.

Note

Chicken supreme cooks very fast and can go dry quickly.
