Laccha Paratha
Makes 4nos
Ingredients
Atta – 2cups
Salt – generous pinch
Water – as required
Butter – be generous
Method
Make a dough using whole wheat flour, salt and water. Give it rest for at least 10 mins. Now divide them into balls and tie rest for another 5 mins.
Method 1
Flatten out the dough using a rolling pin and smear melted butter and sprinkle dry flour on top. Cut them into long strips of 1cm wide. Collect the strips together and start pressing them from the top edge and start rolling them into the shape of a turban.
Secure the fag end beneath the dough. Give 10 min rest to the dough in the fridge. Using a rolling pin flatten it out. Apply a hand of water on the back side of the paratha.
Place the paratha water side down on a hot tawa. After 2 mins turn the paratha and cook for 2 mins. Now remove the tawa and cook paratha on live flame. Once cooked remove to a platter, smear butter and gently crush the paratha between your palms and serve.
Method 2
Flatten out the dough using a rolling pin. Smear melted butter and sprinkle dry flour on top. Start folding the dough like a fan and start pressing them from the top edge and start rolling them into the shape of a turban. Secure the fag end beneath the dough.
Give 10 min rest to the dough in the fridge. Using a rolling pin flatten it out and apply a hand of water on the back side of the paratha. Place the paratha water side down on a hot tawa.
After 2 mins turn the paratha and cook for 2 mins. Remove the tawa and cook paratha on live flame. Once cooked remove to a platter, smear butter and gently crush the paratha between your palms and serve.
Kunals tips & tricks
- resting of the dough is important as it brings out neat lacchas in the paratha.
- Once laccha is made place the rolled pedas in the fridge for 10mins. This will harden the butter again giving out neat lacchas.
- You can prepare the paratha on the inside of a pressure cooker as well.
- You can half bake the paratha and cool them completely. Now place them on butter paper and freeze them.

Pudina Masala Ingredients
Pudina Powder – 3tbsp
Salt – ½ tsp
Black salt – ¼ tsp
Chilli Powder – ¾ tsp
Coriander powder – 1tsp
Heeng (Asafoetida)- ¼ tsp
Roasted cumin Powder – 1tsp
Cardamom powder – ¼ tsp
Chaat Masala – 1 tbsp
For pudina Paratha
Mix all the spices and sprinkle over the paratha once it is cooked.
