Onion Tomato Sandwich

Serves 2

Ingredients

Bread slices - 4 no

Butter - 2tbsp

Papad - 2nos

Filling

Onion chopped - ¼ cup

Tomato chopped - ¼ cup

Cucumber chopped - ¼ cup

Coriander chopped - handful

Green chilli chopped - 1tsp

Chaat masala - 1tsp

Salt

Lemon juice - 1tbsp

Cheese slice - 2nos

Spicy Bruschetta using leftover sandwich filling

French bread slice - 4nos

Olive oil - 2tbsp

Leftover mixture - ½ cup

Bhujia - handful

Method

For the sandwich filling mix together all ingredients except cheese slice. Toss the filling and keep aside. Smear butter on the bread slices on all 4slices. Turn the butter side down for 2 slices and place the filling on top.

Crush the roasted papad in your hands and sprinkle over the filling. Place a cheese slice on top and then cover it with the remaining 2 buttered slices, keeping the butter side up.

Heat a tawa and place the bread on hot tawa. Press gently with a spatula to make sure the bread is toasted on all sides.

Carefully turn it over and cook till the bread browns on both sides. Remove and serve it hot, you may want to cut the sandwich into 2.

For the spicy Bruschetta toast the French bread on both sides on a hot pan. Drizzle some olive oil and remove to a board. Add the leftover sandwich filling on top and sprinkle some masala bhuja on top. Serve immediately.

Tips & tricks

  • Do it over fill as chances of bread getting soggy is high
  • Use a thick sandwich bread for this recipe
  • You may want to use any leftover dry subs along with onion tomato mixture.
  • Once ready consume within minutes.
