Mango Jam
Makes a jar of 450 Gms

Raw mango chopped - 1 cup or 200 gms
Ripe mango chopped - 3cups or 600 gms
Sugar - ¾ cup or 150gms

Method

Add the raw & ripe mango in a mixer grinder jar. Without adding water grind it to a puree. If you want the jam to be a bit chunky then leave some pieces of it in there and do not grind it to a fine puree.

Remove the puree to a pan and add sugar. Turn on the heat and cook on high heat to bring to a boil. Now lower the heat and cook till the puree reduces to ⅓rd or is thick to not leave the spoon. You will also notice the bright yellow colour now very dark. It took me 20 mins approx.

Remove and cool completely and then fill up a clean jar with the mango jam. Refrigerate and use within a month.
