Ingredients

  • Tarbooz diced – 1/2 cup
  • Kharbooza green diced – 1/2 cup
  • Mint leaves – 1 cup
  • Ginger chopped – 1 tbl spn
  • Salt – 1 gm
  • Lemon juice – 2 tbl spn
  • Sarda diced – 1/2 cup
  • Kharbooza Orange Diced – 1/2 cup
  • Honey – 1 tbl spn
  • oil – 3 tbl spn
  • Black pepper powder – 2 gms
  • Pine nuts – 3 tbl spn

Method

  • Toss together all the melons and place in a bowl.
  • Separately mix together mint leaves, ginger, honey, salt, pepper, lemon juice and half of the pine nuts in a blender and puree them. Add little by little oil to ease the grinding.
  • Remove and drizzle this pesto on to the melons. Toast the remaining pine nuts and sprinkle on the top. Serve cold.
