Pyaz ki kachori

Makes 10nos

Ingredients

For the dough

Maida - 250gms/2cups

Salt - ½ tsp

Ghee - 75gms/5tbsp

Oil - 75gms/5tbsp

Water - as required

Oil - for frying

Filling

Oil - 4tbsp

Heeng (asafoetida) - ½ tsp

Ginger chopped - 1tsp

Green chilli chopped - 1tsp

Cumin - 1tsp

Fennel Seeds (Saunf) - 1tsp

Onion chopped - 1½ cups

Black salt - ¼ tsp

Pepper powder - a pinch

Turmeric - ½ tsp

Chilli powder - ½ tsp

Salt - to taste

Pudina chutney - 1cup

Method

For the filling heat oil in a pan and add heeng followed by chopped ginger, green chilli, cumin and fennel seeds. Stir for 30secs and then add onions, black salt, pepper, turmeric, chilli powder and salt to taste. Cook the onions on high heat for 2-3mins. Remove to a plate and cool it completely.

For the dough rub together flour, salt, ghee and oil to make it crumbly. Add sufficient water to make a very soft dough. Knead and keep aside for 10mins.

Divide into 10 equal small pieces and roll them. Now press and flatten them and fill them with the onion filling. Close the dough and make it into a ball.

Heat oil in a deep vessel till medium hot. Gently press the stuffed dough balls to flatten them and then slide them in medium hot oil. Once they start to float increase the heat and fry till golden brown.

Remove and serve hot with chutney.
