he most irresistible Paneer dish is Shahi Paneer. Though many versions of the same exist, mine is simple & of course yummy.

Ingredients

For Curry

  • Tomatoes — 500gms
  • black cardamom – 2 no
  • Onion — 250gms
  • cinnamon stick (small) — 1 no
  • bayleaf – 1 no
  • garlic cloves — 8 nos
  • green cardamom — 4 nos
  • ginger chopped — 1 1/2 tbsp
  • cloves — 4 nos
  • Green chilly – 2 no
  • Cashewnuts – 3/4 cup
  • Butter – 2 tbsp
  • Chilly powder (kashmiri) – 1 tbsp

In the pan

  • Butter – 2 tbsp
  • Green chilly slit – 1 no
  • Ginger chopped – 1 tsp
  • Paneer cubes – 1 1/2 cup
  • Red chilly powder (kashmiri) – a pinch
  • Curry – add the above pureed curry
  • Salt – to taste
  • Sugar – a large pinch
  • Kasoori methi Powder – 1/4 tsp
  • Cream – 1/2 cup

Method

For the curry mix all the ingredients and cook till the tomatoes get mashy. Blend them to make a fine puree and pass through a strainer. Now Heat a pan and add butter. Add ginger chopped and green chilly slit and sauce. Add paneer dices and kashmiri chilly powder.

Add a dash of water so that chilly wont burn. Now add the curry along with salt, sugar, fenugreek powder and cook to a coating consistency. remove from fire and add then add cream. stir and serve hot.
