he most irresistible Paneer dish is Shahi Paneer. Though many versions of the same exist, mine is simple & of course yummy.

Ingredients
For Curry
- Tomatoes — 500gms
- black cardamom – 2 no
- Onion — 250gms
- cinnamon stick (small) — 1 no
- bayleaf – 1 no
- garlic cloves — 8 nos
- green cardamom — 4 nos
- ginger chopped — 1 1/2 tbsp
- cloves — 4 nos
- Green chilly – 2 no
- Cashewnuts – 3/4 cup
- Butter – 2 tbsp
- Chilly powder (kashmiri) – 1 tbsp
In the pan
- Butter – 2 tbsp
- Green chilly slit – 1 no
- Ginger chopped – 1 tsp
- Paneer cubes – 1 1/2 cup
- Red chilly powder (kashmiri) – a pinch
- Curry – add the above pureed curry
- Salt – to taste
- Sugar – a large pinch
- Kasoori methi Powder – 1/4 tsp
- Cream – 1/2 cup
Method
For the curry mix all the ingredients and cook till the tomatoes get mashy. Blend them to make a fine puree and pass through a strainer. Now Heat a pan and add butter. Add ginger chopped and green chilly slit and sauce. Add paneer dices and kashmiri chilly powder.
Add a dash of water so that chilly wont burn. Now add the curry along with salt, sugar, fenugreek powder and cook to a coating consistency. remove from fire and add then add cream. stir and serve hot.
