Veg Masala Pulao

Serves 4

Basmati rice – 2cups

Oil – 4-5 tbsp

Black cardamom – 2 no

Cumin – 1tsp

Bayleaf – 1-2no

Peppercorn – 6-8nos

Cardamom – 3-4 nos

Cloves – 4-5 nos

Cinnamon – Small piece

Pathar Phool – 2 small nos

Onion sliced – 1cup

Ginger chopped – 1tbsp

Garlic chopped – 1tbsp

Green chilli slit – 2-3nos

Turmeric – 1 tsp

Coriander powder - 1½ tbsp

Chilli powder - 1tsp

Tomatoes chopped - 1 cup

Carrot diced - ½ cup

Beans diced -  ½ cup

Potato wedges - 12nos 

Green peas -  ½ cup

Kasoori methi, dried - 2 tsp

Water - 3½ - 4cups

Coriander chopped - for garnish

Method

Wash and soak rice for 30mins

Heat oil and add whole spices. Add onions and brown them, add chopped ginger, garlic and green chilli. Saute and add dash of water. Add powdered spices and saute. Add tomatoes and salt and cook for 3-4 mins. Now add the veggies and methi leaves.

Cook for 2 mins and then add water and bring to a boil(let the veggies be raw).

Drain the water from rice and add it to the pan. Mix and cover and cook till rice is cooked and water is absorbed.

Remove to a platter and garnish with coriander leaves.
