How to Cook Cream of Chicken Soup

Yields: 2 Servings

Ingredients

  • Butter – 2 tbsp
  • Onion chopped – 2 tbsp
  • Thyme – 2 sprigs
  • Flour – 2 tbsp
  • Parsley – for garnish
  • Garlic chopped – 1/2 tbsp
  • Celery chopped – 2 tbsp
  • Chicken cubes boneless – 2 cups
  • Water/Chicken stock – 1 lt
  • Salt – to taste

Method

Melt butter in a pan and add chopped garlic, onions, celery and thyme. Stir it on low flame for 2 mins. Now add chicken and cook for 3 mins. Sprinkle flour and sauté for a minute.

Add water and bring it to a boil. Cook till the chicken is tender. Remove from heat and let it cool down a bit. Now add the soup in a blender and blend it to a smooth creamy texture.

Remove it to the pan again and add a dash of water to correct the thickness. Season with salt and pepper. Remove, garnish with parsley and serve hot.
