Ingredients

  • spinach leaves shredded – 6 cups
  • corn starch – 1/2 cup
  • oil – for deep frying
  • oil – 2 tbsp
  • ginger chopped – 3/4 tbsp
  • garlic chopped -3/4 tbsp
  • green chilli chopped – 1no
  • red chilli chopped – 1 no
  • soya sauce – 4 tbsp
  • vinegar – 1 tbsp
  • sesame seeds – 2 tbsp
  • salt – to taste

Method

  1. Take the clean shredded spinach and place it in a bowl. Sprinkle with corn starch and toss it gently to coat it evenly.
  2. Heat oil in a deep pan and add the spinach to the hot oil. Cook till the spinach turns crispy, this will take not more than a minute.
  3. Remove and place the spinach on an absorbent paper. In a seperate pan add 2tbsp oil, garlic, ginger, green chilli, red chilli and saute them on medium heat.
  4. Add soya sauce & a dash of vinegar. Give this a quick stir and then add the spinach to this. Toss it gently for 15seconds. Sprinkle sesame & salt, Toss again and serve it hot.
