Makes – 2 cups

Ingredients

  • Oil – 5tbsp
  • Bay leaf – 1no
  • Cinnamon – 1 stick
  • Black cardamom – 1no
  • Cloves – 3 no
  • Cardamom – 3no
  • Cumin – 2 tsp
  • Onion sliced – 2 cups
  • Water – a dash
  • Ginger garlic paste – 1tbsp
  • Turmeric – ¾ tsp
  • Chilli powder – 1 tsp
  • Coriander powder - 1 tbsp
  • Cumin powder - 1 tsp
  • Curd - 1 cup
  • Green chilli chopped - 1 no
  • Salt - to taste
  • Water - 2 cups
  • Cashew nuts paste - 2 tbsp
  • Water - a dash
  • Fenugreek (methi) leaves - 1/2 tsp
  • Cream (optional) - 2 tbsp

Method

In a pan heat oil and add bayleaf, cinnamon, cloves, cardamom and cumin. Sauce and then add sliced onion. On medium heat cook the onions till evenly browned. Now add ginger garlic paste and cook for a minute. Add turmeric, chilli powder, coriander powder and cumin powder.

Give a quick stir and then add curd. Increase the heat and cook till it gets a boil. Once the oil surfaces again on the masala add green chilli and water. Mix a dash of water in cashewnut paste and pour in the pan. Cook the curry for 10mins. Now turn off the gas and remove bayleaf and cinnamon.

Once cooled add it to a grinder and puree it. Strain and add a dash of water. Bring it to a quick boil again. Yellow curry or basic fried onion curry is ready to use. You can use veggies, chicken, meat or fish along with this curry.
