(Chicken marinated with coriander, basil, mint, dill & radish leaves)

Ingredients

Chicken leg boneless - 250 gms
Salt - to taste
Oil - for frying

For Green Marinade
Coriander leaves - 1 cup (packed)
Dill leaves -½ cup (packed)
Mint leaves -½ cup (packed)
Spinach blanched -¼ cup (packed)
Onion (small) -¼
Green chilly - 1no
Ginger chopped - 1 tbsp
Garlic chopped - 1 tbsp
Cashew nuts - 6-8nos
Soft cheese chunks -½ cup
Lemon juice - 4 tbsp
Oil - 2 tbsp
Salt - to taste

For shashlik
Onion chunks - handful
Assorted peppers diced - handful
Wooden skewers - as required

Method
Sprinkle salt on the chicken and mix it. Keep it aside. Soak the wooden skewers in water for at least half hour.
To make the green marinade place all the ingredients for the marinade in the mixer grinder jar. Puree the ingredients to a fine paste.
Remove the jar & pour out the marinade over the chicken. To the same marinade add onions & peppers. On wooden skewers alternatively skewer chicken, onion and peppers.
Heat a pan and drizzle oil. Cook the skewers on medium hot pan. Turn and cook on all sides. Remove and serve hot.
