How to cook firni.

Cooking #firni or #phirni is a 3 ingredient recipe. All you need to remember is a simple ratio 4:8:1, :: Rice:Sugar:Milk

Once this base is ready add any flavour you want like vanilla, mango puree, chocolate, saffron, strawberry etc.

Ingredients 
Serves -6
Rice(basmati) – 4 tbsp
Sugar – 8tbsp
Milk (full fat) – 1lt
Cardamom Powder – ¾ tsp
Desi Ghee (optional) – 1 tbsp
Mango Puree (fresh) – 3 tbsp
Dark Chocolate chips/chunks – ¼ cup
Assorted nuts (chopped) – handful
Mint Sprigs - for garnishing

Method

Wash and soak the rice in water for 1hour. drain the water and add 1cup of milk to it and grind the rice coarsely in a grinder. Remember to not make it into a complete paste but instead keep the rice to a fine grain.

Bring the remaining milk to a boil and add the ground rice. Keep stirring continuously. Cook the firni for 15mins or till the time milk thickens and the rice particles turn transparent and cooked. At this stage add sugar, cardamom powder, nuts and desi ghee.

Mix them well and keep cooking till the firni is thick but still pouring. Remove from heat & divide into 3 equal parts. For plain firni pour it into earthen ware pot while it is still hot. Garnish with nuts and mint leaves. You can serve phirni cold, hot or chilled.

For chocolate firni place the chocolate chips in a bowl and pour hot firni over it. Stir till chocolate melts and then immediately pour it into an earthen bowl.

For mango firni add the fresh mango puree to the 3rd portion of the firni, stir and portion out to serve.
