Makes 250 gms paneer/cottage cheese
Ingredients 

Milk (full fat/cream) – 1 lt
Lemon – 1 no
Water – ½ cup
Muslin cloth – a small piece

 

Method

In a pan bring the milk to a boil. Squeeze lemon in a bowl and dilute it with water. Add the lemon juice into boiling milk to split it. If the milk does not split it fully then add some more lemon juice.

Once the milk solids separate remove from heat and strain it through a muslin cloth. Dip the cheese while still in the muslin cloth in water to remove any excess lemon flavour. Do this for a few seconds. now turn around the muslin cloth to squeeze the water out. Tie a knot on the cloth and place it under a chopping board and place a heavy pan on top of the chopping board.

Leave the paneer for 15mins. Later open the cloth and the paneer is ready and in shape. Place the paneer in fridge for atleast 30mins before cutting into desired shape.
