Pesto Hummus with Crispy bread

Ingredients
- Chickpeas boiled – 2 cups
- Lemon juice – 1/2 cup
- Tahini – 2 tbsp
- Olive oil virgin – 3tbl spn
- Basil leaves – 1cups
- Garlic clove -2 nos
- Olive oil – 1/4 cup
- Bread slices – as required
- Garlic cloves – 4nos
- Salt -to taste
- Red chilly powder – a pinch
- For Pesto
- Pine nuts or walnuts (lightly toasted) – 2 tbsp
- Salt – to taste
- Parmesan cheese grated -1/4 cup
Method
- Place the boiled chickpeas in a blender. Add garlic, lemon juice, 2tbl spn olive oil, salt and tahini. Blend into a fine paste, till creamy and fluffy.
- Separately in a blender add basil, garlic, salt, olive oil and pine nuts. Make into a coarse paste. Remove and add grated cheese.
- Combine hummus with pesto and mix well. Pour on top olive oil and serve with crispy bread.
