Ingredients

  • Chickpeas boiled – 2 cups
  • Lemon juice – 1/2 cup
  • Tahini – 2 tbsp
  • Olive oil virgin – 3tbl spn
  • Basil leaves – 1cups
  • Garlic clove -2 nos
  • Olive oil – 1/4 cup
  • Bread slices – as required
  • Garlic cloves – 4nos
  • Salt -to taste
  • Red chilly powder – a pinch
  • For Pesto
  • Pine nuts or walnuts (lightly toasted) – 2 tbsp
  • Salt – to taste
  • Parmesan cheese grated -1/4 cup

Method

  • Place the boiled chickpeas in a blender. Add garlic, lemon juice, 2tbl spn olive oil, salt and tahini. Blend into a fine paste, till creamy and fluffy.
  • Separately in a blender add basil, garlic, salt, olive oil and pine nuts. Make into a coarse paste. Remove and add grated cheese.
  • Combine hummus with pesto and mix well. Pour on top olive oil and serve with crispy bread.
